dinner tonite was superb.
decided rice, fish, and veggies was in order.
Stopped by Richard’s meat market and got some amazingly fresh tilapia (fresh fish every thursday and friday!). Zero smell. It was wonderful.
I steamed some jasmine rice, added some saffron into the water/rice mixture.
In a wok, sauteed up some lemongrass, ginger, garlic,3 red thai peppers,a couple of kaffir lime leaves, and then added a can of coconut milk. Stirred in some golden curry paste. Simmered until the paste dissolved.
Cut the fish into smaller pieces, and put in the coconut milk to cook.
After a few minutes of boiling coconut milk/fish, I added some asparagus stalks and some sugar snap peas (whole).
A few minutes later, added a portabella mushroom (cut into strips, then halved).
Added a little rice wine to increase the fluid level in the wok.
I covered the wok, and let everything simmer for awhile.
Served the fish and veggies over the rice.
It was honestly one of the best things I’ve ever fixed.
If you’ve never had fish in curried coconut milk, try it.
