Ingredients:
- Coarse salt and freshly ground pepper
- 2 twelve-ounce containers Brussels sprouts, trimmed, and halved lengthwise
- 8 ounces bacon, cut into 1/4-inch dice
- 1 Granny Smith apple, peeled, cored, and cut into 1/4-inch dice
- 1/4 teaspoon fresh thyme leaves
Procedure:
- Bring a large pot of water to a boil, and add salt. Add Brussels sprouts, and cook until bright green and Brussels sprouts are tender, about 6 minutes.
- Meanwhile, place bacon in a large skillet over medium heat. Cook until the fat renders, and bacon is crisp, 2 to 3 minutes. Add apples, and cook, stirring occasionally, until apples are golden brown, 2 to 3 minutes. Add thyme, and season with pepper. Using a slotted spoon, transfer Brussels sprouts to skillet. Taste, and adjust for seasoning. Serve immediately.

1 egg
2 jalapeno peppers, seeded and minced
2 cloves garlic, minced
1/4 cup low-sodium soy sauce
1/4 cup Worcestershire sauce
2 teaspoons ground cumin
1 teaspoon mustard powder

1 teaspoon paprika
1/2 teaspoon chili powder
1/4 teaspoon kosher salt
1/4 cup dry bread crumbs
1 1/2 pounds ground turkey
6 hamburger buns, split and toasted

| 1. | Mix the egg, jalapeno peppers, and garlic in a large mixing bowl until the egg is well blended. Add the soy sauce, Worcestershire sauce, cumin, mustard, paprika, chili powder, salt, bread crumbs, and turkey; mix well and form into 6 patties. |
| 2. | Preheat an outdoor grill for medium-high heat, and lightly oil the grate. |
| 3. | Cook the turkey burgers on the preheated grill until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve on the toasted hamburger buns. |

1 – Diced Tomato (large) – for a different taste use roma tomatoes.
1/2 – Finely chopped medium red onion
1 – small red bell pepper finely chopped
1- jalapeno finely chopped – optional
2- tablespoons chopped green onions
2 – tablespoons chopped fresh parsley
Mix together in a bowl
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/8 – 1/4 teaspoon salt
1/8 – 1/4 teaspoon pepper
1/2 – 1 teaspoon sugar
Whisk together in a bowl
Drain 2 cans black eyed peas – add to the dry mixture, then add in the wet ingredients, toss and refrigerate up to 8 hrs. makes 4-6 servings
Tonight, we ate at Za Za Fine Salad & Wood Oven Pizza Company in Little Rock.
It was PERFECT.
The same people who brought you Boulevard Bread in Little Rock, opened a salad and pizza place right down the street (5600 Kavanaugh Blvd).
We split a Salade niçoise and an Italian Sausage Pizza. The Pizza was topped with fresh Arugula.
For dessert, we had some really great gelato, which surpassed anything Fayetteville has to offer by miles. No comparison.

After being sick for the last week, I decided to crawl out of bed and go to Geraldi’s for dinner. I’ve really been digging this place.
Tonight, we ordered the Antipasti Salad and a Pizza (half italian sausage & mushroom, half meatball & onion). Both were really good. This may have become my favorite pizza in town. The crust was great and the marinara was very flavorful.

Since it was my birthday, Jill asked Albert (the owner) to make a canoli (something which he says will be on the menu soon).
I haven’t had a canoli in over 2 years, since I was last in Boston, and this was a REALLY good canoli.

Today marked the day of the annual Soul Food Lunch at St. James United Methodist Church (5 N Willow Ave, Fayetteville).
For $5, you can get a meal of fried chicken, collard greens, beans, coleslaw, cornbread, dessert, and a drink. All proceeds go to the Church, and their efforts to renovate the Church (just check out that new steeple!).
We’ve been attending this annual event for several years. When it comes time for my birthday (Feb 25th), I know it’s time for lunch at St. James.
It’s served in the basement of the Church. You can sit down at tables and eat with others from the community, or get it to go. We usually eat there because it’s a lot of fun meeting and talking to people.
This year, they had FRIED CATFISH as a substitute for the chicken. We got the fish, and it was GREAT. For dessert, we snagged Sweet Potato Pie.
For $5, it’s the best meal deal in town. They really should charge more! We always give an extra donation.
I can’t wait until next year!
Last week, we went to Über Burger Bistro, located in Bistro V, within the 36 Club.
They had really good hamburgers. I had the Lamb & Beef. Quite tasty!
Man, this place has a great salad bar. Their sandwiches are excellent. I recommend the New York Yankee, or the Reuben.
Finally a really good meatball sandwich! I’ve also had the Pesto Veggie, the Torpedo, and the Italian Sausage. All good!

Three Valentine’s Days ago, Jill was between houses. She sold her house on Olive, and was virtually homeless for a month before she could move into our new home.
Luckily, our friend Dede offered Jill a place to stay during this month.
Back then, I asked Jill what she wanted for Valentine’s Day. “Martha Stewart’s Mac & Cheese” was the reply.
That started our new tradition, christened “Fat Fest”. The three of us gather together, eat fatty foods, and enjoy each other’s company.
Last year, we went out for BBQ (Kielbasa Sausage), and followed up with Maggie Moo’s ice cream.
This year, we headed over to Art’s Place on College Avenue, and had their famous hamburgers.
We all ordered the “Art’s Hog Burger”, a burger made with a combination of ground beef, ground bacon, and onions. Add the double pepperjack cheese, a side of fries, and a pitcher of beer – that’s one hell of a good time.
Afterward, we headed over to Cold Stone Creamery for some yummy ice cream.
Can’t wait till next year!
